Breads & Muffins

Being a busy person, I am all about preparing for meals in advance. This is easily done with baked goods, such as bread or muffins which can be refrigerated and frozen until they are needed.

The two main ingredients that I have found work and taste best are applesauce and wheat flour. I use applesauce and bananas instead of oil or butter although coconut oil can be substituted or added.

The recipes can be interchanged for either 6-8 muffins, 1 loaf of bread or 2 small loaves. Silicone muffin pans are great and your muffins will literally pop right out! You can always line your loaf pans with parchment paper and I always add a little coconut oil on top to keep the bread from sticking.

Breads and muffins will be put into the oven at 350°F for about 20 minutes. You can test its readiness by inserting a toothpick; if the toothpick comes out clean, the bread is ready. Allow to cool before slicing.

Handheld Vegan Apple Pies

1 small carton DRINKmaple maple water (8.45 fl oz)
1 tablespoon chia seeds
1/3 cup hazelnuts
1/3 cup walnuts
1/2 cup Anti-Grain apple flour
2 tablespoons coconut oil
1 tablespoon honey (raw and local is the best!)
2 teaspoons cinnamon
2 medium sized chopped apples (support local!)
dash of nutmeg, cinnamon, and ginger

Sautée apples in honey, cinnamon and coconut oil
Mix chia seeds, hazelnuts, and walnuts in a food processor or work with mortar and pestle
Combine crises seeds and nuts with Anti-Grain apple flour
Slowly add DRINKmaple maple water to dry ingredients and mix until smooth
Add the dash of spices (nutmeg, ginger, cinnamon)
Grease a silicone muffin pan with coconut oil
Add 1/3 at a time, layering nut, seed & flour combination, apple and nut, seed & flour combination.
Add thinly sliced apples on top for decoration

Add or subtract to recipes as you feel necessary to fit your needs and enjoy!
