Dinner

Dinner in my house is a time to sit down, relax and catch up on our day so dinner has to be good! I enjoy my time spent in the kitchen and have created a list of some of my favorite healthy meals!

Blueberry Salmon & Wild Rice

1 lb. salmon
1 cup wild rice
1 tablespoon molasses
1 tablespoon orange juice handful of blueberries
1 teaspoon cinnamon

combine molasses, OJ, blueberries & cinnamon with a quick stir
add mixture on top of salmon
add salmon to broiler on high for 15 minutes

Salmon Wild Rice

Chicken Sausage Caps

2 portobello mushroom caps (cleaned and rinsed)
1 Aidells chicken apple sausage (diced)
1/2 orange pepper (diced)
1/2 apple (diced)

add 1 tablespoon coconut oil into a heated skilled and allow to melt
add diced ingredients add portobello caps on top (like a hat)
heat for 10 minutes on medium heat
garnish with sea salt and pepper

Mushroom Caps

Sausage & Rice

1 Aidells chicken apple sausage (diced)
1/2 apple (diced)
1 cup wild rice
1/3 sweet potato (diced)

add 1 teaspoon coconut oil to heated skillet
add diced ingredients into skillet add rice to boiling pot of water to cook
allow both to cook for 10-15 minutes on medium heat
add sea salt and pepper and combine ingredients.

1/2 sweet potato

Surf & Turf

1 cup steamed clams
1 cup organic brown rice
1 cup green beans

steam clams boil water and cook rice toss green beans in skillet with coconut oil, sea salt & pepper

Wacky Mac Attack

1 cup cooked shrimp
(I like to sauté mine with coconut oil and garnish with sea salt and pepper)
2 cups cooked vegetable Wacky Mac

Garnish with sea salt, pepper and teaspoon of olive oil (if desired)

1 cup steamed or sautéed green beans

soybeans
water chestnuts
carrots
mushrooms

1/2 yellow pepper
1 small yellow squash
1 cup mushrooms (or vegetables of your choice!)

rinse all veggies and add ingredients to skillet with coconut oil
cook on medium heat for 10 minutes
garnish with sea salt and pepper

add all ingredients to a sauté pan with coconut oil
cook for 10 minutes on medium heat

The Clean Taco

2 cups organic rice
1 cup steamed vegetables
1 teaspoon Newman’s Own mango salsa

Chicken Apple Sausage and Vegetables

1 chicken sausage
1 cup fresh vegetables

heat 1 teaspoon coconut oil in skillet
add vegetables and chicken sausage
cook on medium heat for 10 minutes
garnish with sea salt and pepper

Chicken and Chick Peas

1 chicken apple sausage
1 cup chickpeas
1 small sweet potato

par boil sweet potato for 10 minutes
clean and cook chickpeas
add chicken sausage to skillet with coconut oil
cook for 10 minutes on medium heat

Swordfish & Summer Squash

1 lb swordfish
1 cup summer squash

add swordfish to pan, garnish with salt, pepper and lemon juice add to broiler on high heat for 15 minutes
wash and chop squash
add to skillet with coconut oil
garnish with sea salt and pepper

Rice with Chicken Sausage & Shredded Carrots

2 cups rice
1 chicken apple sausage
1 large carrot (shredded)

cook rice and sausage cook for 10 minutes on medium heat
add carrots
garnish with sea salt and pepper

Portabello Burger with Steamed Vegetables

1 Gardenburger Portabello Veggie Burger
1 cup steamed veggies

cook burger and veggies
garnish veggies with sea salt and pepper

Sweet Potatoes & Veggies

1 sweet potato
1 cup steamed vegetables

prepare sweet potato how desired
(whole baked, mashed, sliced and baked, etc.)
steam or 
sauté vegetables
garnish with sea salt and pepper

Eggs & Veggies

2 egg whites
1 cup spinach
3 cups vegetables

add coconut oil to skillet and add egg whites and spinach combo
keep on medium/low heat for 10 minutes, flip and flip again
garnish all with sea salt and pepper

Sausage & a Salad

1/3 head of lettuce (washed and chopped)
1 cup blueberries, strawberries & cucumber (washed and chopped)
1 chicken sausage

add sausage to skillet with coconut oil and cook on med heat for 10 mins
chop vegetables and fruit for salad
garnish both with sea salt and pepper
