Breakfast

Breakfast is the most important meal of the day and it is often overlooked.
This is a shame and it needs to stop! I love breakfast and want to share my love for breakfast with everyone!

I have compiled a list of my favorite, fast, healthy breakfasts!

Bosc Pears & Apples with Cranberries

1 teaspoon coconut oil
1 teaspoon dried cranberries
1 Bosc pear (washed & cut)
1 apple (washed & cut)
1 teaspoon cinnamon

Heat coconut oil on skillet
Add cinnamon, apple & pear
Heat on medium heat for 5 minutes
Add cranberries

Bosc Pears

Wheat Pancakes w/Almonds & Cranberry Sauce

3 wheat pancakes
1 cup cranberries
1/2 cup water
2 teaspoons raw honey
1 teaspoon cinnamon
1 teaspoon coconut oil
1 cup almonds

Add coconut oil to skillet
Add pancake batter on medium heat
Add cranberries, water, honey & cinnamon to sauce pan
Cook over medium heat until cranberries are smooth and have burst
Crumble almonds over cranberry sauce & pancakes

Red, White & Blue Parfait

1/2 cup blueberries
1/2  cup rasberries
1 cup granola
1 teaspoon raw honey
1 cup Greek yogurt

Combine ingredients

Blueberry Raspberry Granola

Cantaloupe Boat

1/3 Cantaloupe
1 cup blueberries (washed)
1/3 mango (diced)

Canteloupe Blueberry Mango

Egg Whites & Pineapple

2 egg whites
2 slices pineapple
1 teaspoon coconut oil
1 teaspoon cinnamon
1 teaspoon brown sugar

Add coconut oil, brown sugar & cinnamon to skillet
Heat over medium heat for 5 minutes
Cook egg whites in coconut oil for 8 minutes on medium heat

Santa Claus Melon Bowl

1/2 Santa Claus melon
1 cup blueberries
1 cup raspberries

Egg & Fruit

1 hardboiled egg
1/2 grapefruit
3 strawberries (washed)

Place eggs in saucepan in single layer.
Add cold water, cover eggs by one inch.
Heat over high heat to boiling.
Remove from heat.
Cover pan.
Drain immediately and serve warm or
Cool eggs down in cold water and refrigerate.

Garnish with sea salt & pepper

1/2 small watermelon
1 cup raspberries
1 cup blackberries

2 egg whites
1 cup spinach
1 teaspoon coconut oil
5 strawberries (washed & chopped)

Add coconut oil to skillet
Add egg whites & spinach to skillet
Heat over medium heat for 8 minutes
Garnish with sea salt & pepper

1/2 honeydew melon
1/3 mango (chopped)
6 strawberries (washed & chopped)

1 passionfruit

Grilled Grapefruit

Halve a grapefruit
Sprinkle with cinnamon & brown sugar (optional)
Place directly on grill for 5 minutes or broil on high for 3

2 eggs over easy
1 wheat English muffin
1 teaspoon Nutella

Apple Chicken, Spinach Egg Whites & Fruit

2 egg whites
1 cup spinach
1/2 peach (washed & chopped)
1 Aidells chicken apple sausage
1 teaspoon cinnamon
1 teaspoon coconut oil

Add coconut oil to skillet on medium heat
Add egg whites & spinach
Add Aidells chicken apple sausage
Arrange peach on plate
Cook for 10 minutes, flipping both once
Garnish sausage with cinnamon
Garnish egg whites & spinach with sea salt & pepper

1 teaspoon coconut oil

Add coconut oil to skillet over medium heat
Add egg whites
Add sausage
Cook 10 minutes
Garnish with sea salt & pepper

1 overripe banana
1 cup applesauce
1/2 cup oats
1 teaspoon cinnamon
2 egg whites
2 teaspoons coconut oil

Blend oats in food processor until fine
Combine banana, applesauce, oats & cinnamon
Add coconut oil to skillet
Heat pancakes over medium heat for 5 minutes
Cook egg whites
Garnish with sea salt & pepper

1 slice 7 sprouted grain bread
1 teaspoon Justin’s almond butter
1 teaspoon raw honey
2 slices pineapple
1 teaspoon cinnamon
1 teaspoon brown sugar
1 teaspoon coconut oil

Add coconut oil, pineapple, brown sugar & cinnamon to skillet
Cook over medium heat for 10 minutes
Toast bread, add Justin’s & honey

Apple Yogurt Wrap

1 wheat wrap (toasted in oven)
1 cup low fat vanilla Greek yogurt
1 teaspoon cinnamon
1 teaspoon brown sugar
1 apple (washed & sliced)
1 teaspoon coconut oil

Add coconut oil, brown sugar, cinnamon & apples to skillet
Cook for 5 minutes on low heat
Remove wrap from oven
Add Greek yogurt and sautéed apples
Garnish with cinnamon

1 slice low sodium ham

1 teaspoon coconut oil

Add coconut oil to skillet
Cook egg

Cook at 350°F for 5 minutes

2 cups dried, pitted dates
1/2 cup shredded coconut
1 cup dried cranberries
1/2 cup almonds
1 teaspoon dark chocolate

Combine ingredients in food processor
Wrap & freeze individually
