Snacks

Since I am a fan of multiple small meals throughout the day, I am always snacking! Even if it is as simple as fruit, I always make sure I have plenty of healthy and delicious snacks on hand!

Most of my favorites are super simple and can be made easily at home!

Power Bites

1 cup almond
1 teaspoon dark chocolate
1/2 cup cranberries
1 cup dates
1 teaspoon cinnamon
1 teaspoon honey

Combine all ingredients in food processor
Blend for 3 or so minutes
Roll into bite-size balls
Freeze for later & enjoy!

Carrots & Dip

2 cups baby carrots (washed)
1/2 cup Greek yogurt dip

Simple & Sweet

2 strawberries (washed & quartered)
1/2 yellow/orange/green/red pepper (washed & chopped)

Veggie Platter

1/3 cucumber (washed & chopped)
1/2 yellow/green/red/orange pepper (washed & chopped)
7 baby carrots (washed)
5 Zima tomatoes (washed)

Be Kind to Yourself

Blood Orange

Peel & enjoy as you would a normal orange.

Wash & pop into freezer until frozen

Cantaloupe 

Halve melon
Remove seeds
Dice
Refrigerate leftovers
Freeze if desired

Apricot

Similar in structure to a peach, halve, remove pit & enjoy

Hard-Boiled Egg

2 eggs

Place eggs in saucepan in single layer.
Add cold water, cover eggs by one inch.
Heat over high heat to boiling.
Remove from heat.
Cover pan.
Drain immediately and serve warm or
Cool eggs down in cold water and refrigerate.

Garnish with sea salt & pepper

Mango

Once ripe, cut your mango into four pieces around the pit.
Dice with sharp knife while still attached, minding the flesh.
Use a spoon to scoop out diced mango.

Banana

Once ripe*, open banana from bottom up for cleaner approach
Chop to desired size.

* Bananas can also be frozen once ripe
and used for smoothies, baking and nice cream.

Orange/Yellow/Green Pepper

Wash & chop
Garnish with sea salt & pepper
Eat raw or cook in coconut oil

Once ripe, halve and dice into squares.

Coconut

Halve a coconut
Empty out coconut
Collect meat
Enjoy

Tortilla Chips

4 tortillas (wheat, flour, multi-grain, etc.)
Cut into 8 equal pieces
Brush with oil (olive oil, coconut oil, etc.)
Sprinkle with sea salt & pepper

Put into 400°F oven for 5 minutes.

Grilled Grapefruit

Halve a grapefruit
Sprinkle with cinnamon & brown sugar (optional)
Place directly on grill for 5 minutes or broil on high for 3.
