TigerNuts are versatile and can also be made into flour for baking and cooking! Simply grind them in a spice grinder and you’ve got a quick, healthy flour that is versatile and delicious!
I got creative in the kitchen with my TigerNuts from Organic Gemini and created paleo blueberry muffins with homemade TigerNut flour!
All you need to create TigerNut flour from TigerNuts is a good coffee or spice grinder that can handle grinding the tough TigerNuts. Add half a cup or less at a time (depending on the size of your grinder) and grind them up until they become a fine powdery flour.
TigerNut flour is an easy and great way to incorporate TigerNuts into your diet and a great way to help with meal preparation! I love baking muffins on the weekend for my breakfast during the week at work and school when I am too busy. I made delicious TigerNut blueberry muffins and have listed the recipe below!
TigerNut Blueberry Muffins
2 cups TigerNut flour
2 overripe bananas
1 cup fresh or freeze-dried blueberries
4 TBSP coconut water
1 tsp. coconut oil
1 tsp. cinnamon
optional: gluten-free/cornstarch-free baking powder
(I did not use baking powder and they still came out splendid!)
Preheat oven to 350°F, brush muffin pan (average or mini) with coconut oil.
Combine all ingredients except blueberries in a large mixing bowl. Stir until smooth, being sure to add moisture if your batter is too dry or a little extra flour if it is too runny. Add the blueberries last and fold into the already-combined batter. Fill your muffin pan to the top, leaving room if you are adding baking powder to your batter. Add the now-filled muffin pan to the preheated oven and allow them to bake for 15-20 minutes.
Keep a close eye on them if you are making mini muffins and remove your muffin pan from the oven when the muffin edges are golden brown.
Allow them to cool slightly and remove from the pan and place on a wire rack to continue cooling. Be sure to enjoy a muffin while is it still warm as a reward for all of your hard work! Another option for your blueberry muffins is to wrap each individually once they have cooled as a snack for on-the-go or save for later!
