When craving a sweet treat, my delicious Raw Cacao Cookies will do the trick! Packed with homemade almond flour, goji berries, coconut oil and cacao nibs, you’ll want to have them for breakfast, lunch and dinner!
To get started, have your food processor, or similar tool, ready to go. I made sure to pulse everything to a consistency similar to the almond flour, but pulse as you please!
Kate Eats Clean Raw Cacao Cookies
2 cups almond flour
1/2 cup goji berries
1/4 cup cacao nibs
1/4 cup chia seeds
3 tablespoons coconut oil (add if needed)
1 tsp cinnamon
Combine the dry ingredients first and then fold in the melted coconut oil to the mixture. Create inch-sized balls and then flatten before baking. Bake at 350 °F for 10-12 minutes or until slightly browned. Remove from pan and place on cooling rack to stop the baking process.
For the goji berries, I used http://www.Sunfood.com goji berries because they are the sweetest and juiciest solo and in recipes!
For breakfast, lunch, after dinner and on-the-go, my Raw Cacao Cookies will fill you up while balancing out your diet.. Grain-free and made with only raw ingredients, this recipe is sure to be a hit!
My Raw Cacao Cookies can be refrigerated or even frozen in an air-tight container to prepare for meals or clean cheats far in advance!
