I grew up on the water so fresh, local seafood has always played an important role in my life. One of my favorite dishes to prepare is salmon with an Asian flair! To get started, ensure your salmon is not frozen so it can absorb all of the marinade ingredients. Below is the recipe for my Ginger Soy Marinade, the Ginger Soy Salmon and the Pomegranate and Avocado side dish!
Ginger Soy Marinade:
1/2 cup GF soy sauce
small knuckle of ginger*
rosemary*
lemon zest*
one clove of garlic*
* dice or grate and combine
Allow the fresh or thawed salmon to soak in the marinade for an hour. Remove from marinade and place on coconut-oiled baking sheet to cook in the oven.
Pomegranate + Avocado
1/2 an avocado and slice
brush with 1 tsp coconut oil
mix in pomegranate seeds
sprinkle sea salt and pepper
Add to broiler for 3-5 minutes and enjoy!
